Spicy Roasted Cauliflower

This is my favorite way to enjoy cauliflower!! It is a great healthy side to just about any main meat dish. The leftovers are great cold as a snack or tossed in to a salad.



INGREDIENTS
1 head cauliflower
2 tablespoons vegetable oil
1/2 teaspoon ground chipotle pepper powder
1/2 teaspoon roasted garlic powder
1/4 teaspoon dried oregano
Salt to taste

DIRECTIONS
Chop the cauliflower into small florets, about 1 inch pieces.
Mix all the ingredients together in a mixing bowl making sure the cauliflower is evenly coated and pour onto a baking sheet.
Cook in a preheated 400 degrees Fahrenheit oven for 25 to 30 minutes, until the edges of the cauliflower start to brown.
Enjoy! 

*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure. If in doubt, call the toll free number on packaging to be safe and to make your cooking/eating experience is truly gluten free.

  1. \ made a small serving of this to serve over fresh spring greens-pea shoots, spring turnip greens and radish greens. I used fresh garlic which roasted itself ( ;) ) and *fresh* oregano from the garden. This would just as good with other cruciferous veggies: broccoli, romanesco, etc. Prepared for Best of 2015.
