Baked Apple Mustard Crusted Salmon

This is a tasty salmon recipe I really enjoy. In my opinion it has the perfect balance of sweet, salty and tangy. Serve it with a side of rice or steamed vegetables for a great meal.



INGREDIENTS
1 pound skin-on salmon
1 cup pure apple juice
1 teaspoon GF soy sauce
2 tablespoons sugar free apple sauce
1 tablespoon old fashioned grainy mustard
1/2 tablespoon horseradish
1/2 tablespoon maple syrup
1/4 teaspoon garlic powder
Salt and Pepper to taste

DIRECTIONS
Place the salmon and apple juice and soy sauce in a large re-sealable plastic bag, take as much of the air out of the bag as you can; seal and keep refrigerated for 2 hours.
Mix together the apple sauce, mustard, horseradish, maple syrup and garlic powder.
Remove the salmon from the marinade and place skin side down on a baking pan that has been coated with non-stick spray.
Season the fish with salt and pepper and coat the top and sides with all of the sauce.
Place in a preheated 375 degree Fahrenheit oven and cook for 25 to 30 minutes or until fish flakes easily when poked with a fork.
Turn the broiler on and place the fish on the top shelf of the oven and broil until sauce starts to brown and sticks to the fish like a crust.
