I enjoy these as is but they can also be enjoyed with the
traditional taco toppings like lettuce, tomatoes, sour cream, more salsa sauce
and even guacamole.
INGREDIENTS
2 GF hard taco shells (I use the corn flour shells)
2 large eggs
1 green onion, chopped (Save green parts for garnish)
1 ounce shredded cheddar cheese
2 tablespoons salsa sauce
1 teaspoon GF taco seasoning
1 tablespoon butter
DIRECTIONS
Whisk together the eggs, onion, cheese and taco seasoning
and set aside.
Melt the butter over-medium-high heat in a skillet and add
the egg mixture.
Stir to scramble until cooked through.
Spoon the egg mixture into the taco shells, garnish with
green parts of onion.
Enjoy!
