These caramel dumplings are a traditional French Canadian dessert that are typically served on special occasions. I like to serve this with vanilla ice cream but they are fantastic on their own.
Ingredients
1 cup gluten free biscuit mix (I use Bob's Red Mill)
1/4 cup white sugar
1/2 teaspoon baking powder
1/2 cup milk (plus a bit more)
1/2 tablespoon melted butter
3/4 cup brown sugar
1 cup boiling water
1 teaspoon good quality vanilla
1 tablespoon butter
Directions
Mix together flour, white sugar and baking powder until well blended.
Add milk and melted butter to the flour mixture, mix well and set aside. (You might need a bit more milk depending on altitude and temperature. You want a dough that sticks together)
Pour the remaining ingredients in a large pan and bring to a boil over medium heat.
Drop dough mixture by spoonfuls into the sauce.
Cover and let simmer for 10 minutes without lifting cover.
Serve warm.
