Crock Pot Indian Butter Chicken -Sooooo good!!

This Butter Chicken recipe is one I enjoy often. My DH is not a big fan of Indian food but he does really enjoy this. Serve this with a side of Jasmine or Basmati rice or your favorite gluten free bun to soak up those fantastic juices.

Serves 4


Ingredients
1/4 cup butter or ghee
2 pounds boneless, skinless chicken thighs, cut into 1 inch cubes
1 onion, chopped
4 cloves garlic, chopped
1  tablespoons fresh grated ginger
1 1/2 tablespoon medium curry powder
2 teaspoons Garam Masala
1 teaspoon salt
1/2 cup chicken broth
8 ounces tomato sauce
8 ounces fire roasted diced tomatoes
1 cup coconut milk

Directions

Melt the butter in a skillet and add the chicken, onion, garlic, ginger, curry powder, Garam Masala and salt. 
Cook for 3 to 4 minutes or until the chicken is no longer pink on the outside but not browned: pour into crock-pot.
Pour the soup broth into the skillet and scrape the bits off the bottom; pour into the crock-pot.
Stir in the tomato sauce, canned fire roasted diced tomatoes and coconut milk.
Cook on low for 6-8 hours or on high for 4 hours.
Enjoy!

  1. Loved this butter chicken -- the coconut milk and tomatoes/sauce really complimented one another. This dish didn't take the full time -- a little over 4 hours even on low. Served it over rice with cilantro leaves on top. YUM!

  3. This dish is Superb! The fact that you can pop it in the slow cooker and come home to a wonderful smell that just enticed every part of my being is a guarantee that it will be made again. I love how the onions, garlic, and ginger are sauteed ahead because it just makes it tastes better. I don't care for raw onions and/or garlic when thrown into a slowcooker given that the raw taste stays with the dish, but this recipe is perfect. Thank you QueenBea for sharing. Made it for FYC tag game.

  4. Loved this! Actually I had a whole chicken which I skinned and boned, and it came out so wonderfully flavourful and juicy, not dry at all even though the breasts were in there, too. Will make this again! Thanks for sharing this great recipe. Made for FOC game.
