My daughter recently asked me to show her how to make my
tomato and cabbage soup. This soup was something I just usually tossed together
and never measured until she came over and we made it together. It is a hearty;
warm your innards kinda soup we enjoy in the fall and winter. This soup freezes
well so I like to freeze it in individual portions for quick work lunches.
INGREDIENTS
1 1/2 pound diced tomatoes
1 pound chopped cabbage
1/4 pound chopped carrots
1/4 pound chopped celery
1 chopped onion
8 cups GF vegetable broth
2 teaspoons ground ginger
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon ground allspice
DIRECTIONS
Place all the ingredients in a large heavy bottom pot and
bring to a boil on the stove-top
Reduce heat to medium-low, cover and simmer for a couple of
hours.
Ladle into bowls and enjoy.
*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure.
