This is a pie I have been making for ages. It is so easy to
make and tastes awesome! Do not omit the oatmeal or you will have a very runny
pie; it absorbs all the juices and thickens as the pie is cooking.
INGREDIENTS
2 GF uncooked 9" pie shells
2 1/2 cups frozen strawberries
2 cups frozen rhubarb
1 cup sugar
1/4 cup butter
1/4 cup GF oatmeal
1 tablespoon corn starch
1/2 teaspoon cinnamon
DIRECTIONS
Place the berries and rhubarb in a large bowl and allow to
thaw completely.
Pour the thawed berries and rhubarb in a pot and stir in the
sugar, butter, corn starch and cinnamon; bring to a boil and cook until
thickened.
Spoon half the mixture in a pie shell and sprinkle the
oatmeal over this mixture, add the remaining berry mixture and top with pie
shell.
Make a few slits in the top pie shell and place the pie on a
rimmed baking sheet. (this is to avoid the drippings from making a mess in the
oven)
Place in a preheated 375 degree Fahrenheit oven and cook for
45 minutes or until crust is cooked and golden.
