I was going through my freezer stash and found some leftover roast pork that I had vacuum packed. I decided to use it up to make this for my daughter and I, we both really enjoyed it.
INGREDIENTS
8 ounces
cooked pork, chopped
8 ounces
thinly sliced potatoes
3/4 cup GF BBQ
sauce
1/2 cup
frozen mixed diced bell pepper, onion, celery and carrot
1/4
teaspoon liquid smoke
Seasoned
salt to taste
Pepper to
taste
Freshly
grated parmesan cheese, as much as you like (can use mozzarella)
DIRECTIONS
Mix the BBQ
sauce with the liquid smoke and set aside.
Placed the
cooked pork in the bottom of a small casserole dish; pour the BBQ sauce mixture
over the pork.
Add the
frozen vegetables and layer the potatoes on top.
Sprinkle
with seasoned salt and pepper, cover and place in a preheated 350 degree
Fahrenheit oven; cook for 1 1/2 to 2 hours until potatoes are soft.
Remove
cover and sprinkle with freshly grated parmesan cheese; place on top rack of
oven and broil until cheese starts to brown, about 3 minutes.
