Indian Inspired Rice and Black Beans

This is a great tasting rice recipe I really enjoy, it is great served with any curry dish.

INGREDIENTS
1 cup water
1 cup GF instant rice
1 cup cooked black beans
2 teaspoons GF chicken bouillon powder
1 teaspoon butter
1/4 teaspoon fennel
1/4 teaspoon cumin
1/4 teaspoon Indian Masala
Dash turmeric
Dash garlic powder

DIRECTIONS
Ground the fennel into a powder with a spice grinder or mortar and pestle.
Whisk together the water, bouillon powder, cumin, Indian masala, ground fennel, garlic powder and turmeric in a pot; bring to a boil over high heat.
Stir in the remaining ingredients, cover and set aside for 10 minutes.
Enjoy!

  1. Typically one expects a whole different seasoning palette with rice and beans, but this version was really different and good! That being said, DH liked it but didn't notice that there were different flavors! LOL Thanks!

  2. Very easy to make and very tasty, I wasnt shy with the spices, beautiful yellow rice with very good flavour. The black beans were an addition I wouldnt have thought of but in fact really complemented the rice. Good recipe, and in fact I will make the rice often but not always including the beans, Im a great rice lover and very much enjoyed the flavours here. Thanks Bea!!!
