This great tasting salad is a great way to use up left over
rotisserie or baked chicken.
INGREDIENTS
3 ounces chopped lettuce
2 ounces cooked chicken, chopped
2 ounces Asian pear, chopped
2 ounces sliced cucumber
2 tablespoons rice vinegar
1 teaspoon extra virgin olive oil
1 teaspoon dried chives
1/2 teaspoon brown sugar
1/2 teaspoon GF soy sauce
1/4 teaspoon sesame oil
1/4 teaspoon jarred prepared minced ginger
1/8 teaspoon garlic powder
few drops hot sauce
Pinch hot pepper flakes
DIRECTIONS
Whisk together the vinegar, olive oil, chives, brown sugar,
soy sauce, sesame oil, minced ginger, garlic powder, hot sauce and hot pepper
flakes; set aside.
Place the lettuce in a salad bowl and top with the chicken,
cucumbers and pears and drizzle with the seasoned oil and vinegar mixture.
Enjoy!
