This is very similar to sloppy Joes but stuffed in a
mushroom and not as “sloppy”.
INGREDIENTS
4 Portobello mushrooms (3 ounces each)
4 slices Gouda cheese (1 ounce each)
1 pound lean ground beef
1 can GF green chilies (127ml)
1/3 cup GF cooked rice
1/3 cup GF ketchup
3 tablespoons grated parmesan cheese
1 tablespoon GF mustard
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon salt
DIRECTIONS
Place the ground
beef, green chilies, ketchup, mustard, chili powder, garlic powder, dried
oregano and salt in a large non-stick skillet
cook over medium-high heat until beef is browned.
Meanwhile, remove the gills and stems from the mushrooms and
wipe them clean.
Add the rice and parmesan cheese to the cooked meat mixture and stuff the
mushrooms using all the meat mixture.
Place the mushrooms, stuffed sides up on a baking pan and
top with the cheese slices.
Place under the broiler on the top shelf of the oven for 3
to 4 minutes until cheese is melted and is slightly browned.
Allow to cool a couple of minutes.
