Spice Rub for Pork or Chicken

I make a big batch of this and keep it on hand for quick prep. This combination of spices and herbs work really well together and has a lovely mild smoke flavour to it. Rub it into all the crevices of the meat and let it sit in the refrigerator for a couple of hours before cooking it, this will allow the spices and herbs to permeate the meat. This recipe makes enough rub for 10 pounds of meat.

INGREDIENTS
1/2 cup brown sugar
3 tablespoons garlic powder
3 tablespoons mustard seeds 
2 tablespoons smoked paprika
1 tablespoon dried oregano
1 tablespoon ground ginger
1 tablespoon salt
1 teaspoon ground pepper

DIRECTIONS
Crush the mustard seeds with a mortar and pestle or in a spice grinder.
Mix all the ingredients together and store in an airtight container for future use. I store mine in a re-sealable plastic bag.

Rubbed over ribs

The ribs with the rub all cooked and ready to be eaten, yum!
