Crisp Cucumber Pickles

These are awesome pickles that stay crisp even after being frozen. This awesome recipe is from my dear friend Bergy over at recipezazz.

2 average sized cucumbers, thinly sliced, peel on
1 onion, thinly sliced
1 cup bell pepper, diced
1 tablespoon pickling salt
1 teaspoon fennel seeds
1 cup white vinegar
1 cup white sugar
enough water to cover

Combine all the ingredients in a bowl (not a metal bowl).
Mix well, cover and place if fridge for 3 days.
Pack into freezer containers or zip lock bags, distribute the brine evenly and freeze until ready to thaw.
