Bea's Kickin' Moose Sticks


I was gifted a couple of Moose roasts by one of my co-workers and decided to make skewers with one of the roasts. These turned out so moist and tender and they tasted  great. Just enough heat for our liking. Thanks for the lovely gift Jeremiah.

If using wooden skewers, make sure you soak them in water for at least half an hour. 

 For those of you who don't have access to Frank's RedHot Sauce, I do have a copycat recipe for it HERE

INGREDIENTS

1 moose roast (2 1/2 to 3 pounds) 
1 cup pineapple juice
1/2 cup Frank's RedHot sauce
1/4 cup vegetable oil
1/4 cup GF low-sodium soy sauce, such as VH brand
2 tablespoons brown sugar
1 tablespoon dried oregano
1 teaspoon hot pepper flakes
1/2 teaspoon dried thyme

DIRECTIONS

Remove all the fat and membrane from the moose meat and cut into bite size pieces; set aside.
In a large re-sealeabe plastic bag add the pineapple juice, hot sauce, vegetable oil, soy sauce, brown sugar and hot pepper flakes.
Place the oregano and thyme in the palm of your hand and rub to release the aroma then add to marinade.
Add the meat and swish to coat the meat; place in refrigerator and marinate for at least 6 hours.
Place the meat onto 8 skewers and grill until cooked to desired doneness, basting with marinade every so often.
