Dorm Room Breakfast Burger

This simple recipe is one my daughter found in a leaflet type cookbook handed out to university students who lived in the dorms at the university she attended. The only appliances allowed in the dorm rooms were bar size fridges and microwaves. This cookbook was full of easy microwave recipes and this is one I made gluten free and enjoy quite often.

INGREDIENTS
1 GF hamburger bun (I use the UDI`s brand)
2 large eggs
1 cheese slice (your favourite kind)
1 lettuce leaf
1 tomato slice
1 onion slice 
1 to 2 teaspoons GF mayonnaise
salt to taste
pepper to taste

DIRECTIONS
Coat a deep cereal bowl with non-stick spray and crack the eggs inside the bowl.
Poke both yolks with a fork, season with salt and pepper and place in microwave.
Cook at high power for approximately 2 minutes, this will depend on the size and power of the microwave oven you are using. (I have a high powered oven and 1 minute 45 seconds is enough time for me).
Place the cheese on the bottom bun along with the egg then top with tomato, onion and lettuce.
Spread the mayo on the top bun and place over the lettuce and enjoy your hearty breakfast.
