This tasty pork chop recipe comes together quite easily and tastes awesome!!! Perfect for the ginger lovers.
INGREDIENTS
2 sirloin pork chops
2 apples, peeled and grated down to the core (discard core)
1 sweet potatoes, peeled and grated (about 10 ounces)
2 shallots, finely chopped
1 half inch piece fresh ginger, grated
1/2 cup white wine
2 tablespoons butter
1/2 teaspoon dried thyme
salt to taste
pepper to taste
DIRECTIONS
Melt 1 tablespoon butter in a skillet over medium-high heat.
Add the onion, ginger and dried thyme and cook until onion
is softened and translucent.
Meanwhile coat a casserole dish with non-stick spray and add
the grated sweet potato and apples.
Add the onion mixture to the casserole dish and season with
salt and pepper to taste.
Season both sides of the pork chops with salt and pepper to
taste.
Melt the other tablespoon of butter in the skillet and brown
the pork chops on both sides until they have a nice “crust”.
Place the pork chops on top of the sweet potatoes, apples
and onion mixture.
Add the wine to the skillet and simmer while scraping up the
bits until reduced by about half.
Pour the wine over the pork chops and vegetables, cover and
bake in a pre-heated 350 degree oven for 35 minutes or until sweet potatoes are
soft.
Uncover and cook for another 10 minutes.
Enjoy!
Made this dish tonight for dinner and we enjoyed it. Loved the combination of the sweet potatoes and apples and they really complimented the pork chops well. Nancy : )
