INGREDIENTS
2 average size rainbow trout filets
1/2 cup brown sugar
2 tablespoons salt
DIRECTIONS
Mix the sugar and salt together.
Lay the fillets skin side down on a the smoker rack.
Rub the sugar/salt mixture over top of the filets.
Place rack in the smoker.
Smoke in a 250 degree Fahrenheit smoker for 1 1/2 hours.
