Pan-Fried Spinach with Tomatoes and Bacon

This is a tasty spinach side dish I enjoy quite often.

INGREDIENTS
8 ounces spinach, rinsed and NOT dried
2 cups grape or cherry tomatoes, halved
1 small onion, sliced
1 large clove garlic, minced
1 tablespoon bacon drippings
1/2 cup condensed tomato soup
GF Bacon strips, cooked

DIRECTIONS
Heat frying pan, add olive oil and sauté garlic and onions until soft.
Add soup and tomatoes and simmer on medium heat for 3 minutes.
Stir in the wet spinach and bacon and cover the pan.
Allow to simmer for 3 minutes or until wilted.
Serve.
