A very easy side dish I
serve during tomato season. Deeeeelish...
INGREDIENTS
1 pound tomatoes, sliced
1 red onion, sliced into
rounds
1 tablespoon olive oil
1 tablespoon balsamic
vinegar
2 cloves garlic, minced
Salt, to taste
Pepper, to taste
DIRECTIONS
Preheat oven to 450 degrees
Fahrenheit.
Arrange tomatoes and onions
in layers in a 9” X 9” baking pan.
Toss minced garlic over
mixture.
Drizzle with the olive oil
and balsamic vinegar.
Season with salt and pepper.
Bake until onions are
cooked, about 15 minutes.
Set
aside and serve warm.
