INGREDIENTS
2 medium baked potatoes
2 green onions, white and green parts, sliced
2 tablespoons vegetable oil
2 teaspoons parmesan cheese
seasoned salt to taste
vinegar to taste
DIRECTIONS
Bring the oil to medium-high heat in a skillet.
Lay the potatoes down and toss in the onions.
Check occasionally with a table knife to see the bottoms of
potatoes are browned; when golden brown flip them over.
When crisped on both sides, remove from pan and drizzle with
parmesan cheese, the vinegar if using.
Serve.
