Mozza and Bacon Moose Burger

This great tasting burger is always a hit. I actually used a gluten free english muffin for this photo but you can use your favourite  buns for this burger.

INGREDIENTS
1 pound lean ground moose (any extra lean ground red meat works for this)
1/2 pound bacon, diced small
1 clove garlic, pressed
1 teaspoon hot pepper flakes (more or less to taste)
1 1/2 ounces mozzarella cheese cut into 4 pieces
4 GF buns

DIRECTIONS
In a large bowl, mix together the ground meat, diced bacon, pressed garlic and hot pepper flakes with your bare hands making sure everything is well blended.
Divide this mixture into 4 equal portions (These are hefty burgers).
Place the piece of cheese in the middle of each meat portion and shape into a patty, making sure the cheese is not exposed.
Refrigerate for 1 hour to allow the garlic to permeate into the meat.
Remove from refrigerator and allow resting for 20 minutes.
Cook the burgers on a well oiled, pre-heated grill or skillet until cooked to desired doneness.
Place on the buns and top with your favourite fixings.
