INGREDIENTS
1/4 medium cucumber, cut into bite size pieces
5 green onions, thinly sliced
pinch salt
6 cherry tomatoes, halved
1/2 tablespoon snipped parley
Cumin, to taste
freshly ground pepper, to taste
1 clove garlic, finely chopped
1/2 cup non-fat plain yogurt
DIRECTIONS
Mix cucumber, green onion and salt; let stand 10 minutes.
Add tomatoes, parsley, cumin, pepper and garlic.
Cover and refrigerate for 1 hour.
Just before serving, drain vegetables thoroughly in a
colander.
Add yogurt; mix well to combine.
Serve.
