I make this stuffing when we are smoking or deep frying our turkey.
1 loaf of GF bread, cubed
3 stalks celery, chopped
1 onion, chopped
1/4 cup butter
2 1/2 cups GF chicken broth and a bit more
1 tablespoon dried parsley
poultry seasoning, to taste
salt, to taste
pepper, to taste
dried thyme, to taste
Preheat the oven to 350 F degrees.
Sauté the celery and onions in the butter until onions are light yellow, about 10 to 15 minutes.
Pour the sautéed veggies/butter mixture over the bread; toss gently.
Combine chicken stock, salt, poultry seasoning, pepper, thyme and parsley; whisk to moisten seasonings; pour over bread mixture; Mix lightly but thoroughly, avoid over mixing.
Place mixture into a well greased 9 x 13 roasting pan and cover with foil.
For a crisp top bake in a 350 F degree oven on the middle rack, for 1 1/2 to 2 hours until well browned and the top is crisp.
For a less crisp dressing bake only 1 1/2 hours.
