An inexpensive recipe that is so simple to put together and very tasty.
2 turkey thighs
1/2 cup white wine
1/4 cup water
1/4 cup pesto
1 large clove garlic, pressed
1/2 teaspoon salt
fresh ground pepper, to taste
Place the wine, water, pesto, garlic and salt in as large re-sealable bag and mix well.
Add the chicken and toss to coat; place in the refrigerator for 4 to 6 hours.
Fit a baking pan with a wire rack and place the chicken pieces on the wire rack, sprinkle with pepper.
Pour enough marinade in the pan to come up about 1/4 inch of the bottom of pan.
Bake uncovered in a preheated 375 degree oven for about 1 hour and 15 minutes, until juiced run clear when poked with a fork.
