Boulettes Française (French Canadian meatballs in White Sauce)

Boulettes Française 
This is a dish my grandmother made quite often. It is a traditional French Canadian weekday dinner.

INGREDIENTS
1 pound lean ground beef
1/8 teaspoon ground cloves
1/8 teaspoon poultry seasoning
Salt, to taste
Pepper, to taste
1 whole onion, peeled
2 whole garlic cloves, peeled and crushed
2 tablespoons cornstarch mixed with 3 tablespoons water

DIRECTIONS
Mix meat and seasonings.
Shape into 1 inch meatballs.
Put enough water in saucepan so it will cover meatballs.
Bring to a boil.
Add whole onion and garlic cloves.
Add 1 meatball at a time so water does not stop boiling.
Cook until meat is white, adding water as necessary, making sure meatballs are at least 3/4 covered - about 30 minutes.
Remove onion and garlic.
Mix cornstarch and water together and mix well insuring there are no lumps.
Pour slowly into the pan to thicken.
Serve.

  1. Pure comfort food :) I didn't have poultry seasoning, so I used some fresh sage, rosemary and thyme (didn't have dried sage and rosemary), and it turned out wonderful. Will make it again! Thanks for sharing this recipe of your grandmother's.

  2. Wow, Bea - these are soooo gooood!!! I was skeptical that meatballs boiled in water would produce a really good flavor, but the method was intriguing. I was so wrong - the sauce is flavorful and the meatballs were tender and wonderful! Followed directions explicitly, including the ingredients. Thanks for sharing this marvelous dish!
