Mike's Curry Mayonnaise YUMMY

I found this recipe over at Just A Pinch. The recipe author, Mikekey, has many great recipes and this one did not disappoint. It was fantastic on a turkey burger!!! I see many uses for this in the future.



INGREDIENTS
2 tablespoons olive oil
2 teaspoons minced onion
1 tablespoon hot curry powder
1 teaspoon grated fresh ginger
1 teaspoon toasted cumin seeds, ground
1/2 teaspoon ground turmeric
1 pinch cayenne pepper
ground white pepper, to taste
1 cup real mayonnaise (not salad dressing)

DIRECTIONS
Heat oil in a small saute pan over medium-low heat. 
Add onion and cook until it is limp, about 7 minutes, stirring frequently. 
Add spices and pepper to taste. Cook, stirring constantly, for 2 minutes. 
Remove from heat and let cool completely.
Put mayonnaise in a small bowl and fold in spice mixture. 
Refrigerate, covered, until well chilled.
Enjoy!
