Creamy Pesto Fusilli with Beef

This pasta recipe is so rich and creamy and very tasty!! The best thing about this recipe is that it is super easy to throw together and company worthy. I serve this with a side of garlic toast, YUM!

1 pound beef chunks
Salt to taste
Pepper to taste
2 tablespoons olive oil
120 grams GF dry fusilli pasta noodles
1 1/2 cup water or more
1/4 cup plus 1 tablespoon basil pesto, divided
2 to 3 tablespoons cream cheese (depending on how creamy you want it)

Season the beef chunks with salt and pepper.
Bring the oil to medium-high heat in a large skillet and add the beef and brown on all sides.
Add the fusilli, 1 1/2 cup water and 1/4 cup pesto and simmer until pasta is just cooked. You may need to add a bit more water to stop the pasta from sticking to pan; add a bit at a time if necessary, you want just a bit of liquid left once cooked.
Stir in the remaining ingredients and warm through.
