Sweet and Sour Pork Meatballs

These are great tasting meatballs I serve over cooked rice or Chinese noodles. They have been a favorite here for ages!

1 onion diced small
1 bell pepper diced small
2 tablespoons coconut oil

2 1/2 pounds ground pork
1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon dried ground ginger
1 teaspoon salt
1/2 teaspoon fresh ground pepper
3 tablespoons water
1 tablespoon ground flax seeds
2 cups water
2 1/2 tablespoons corn starch
1/2 cup tomato ketchup
2 tablespoons orange marmalade
2 tablespoons rice vinegar
1 tablespoon mirin
1 tablespoon ginger paste
2 teaspoons GF Worcestershire sauce

In a small bowl mix together the water and ground flax seeds; set aside and let sit for 15 minutes.
Mix together the ground pork, onion powder, garlic powder, ground ginger, salt, pepper and flax seed and water mixture.
Form into 1 inch meatballs and place on a rimmed baking sheet.
Place in a preheated 350 degree Fahrenheit oven and cook for 15 minutes.
In the meantime, melt the coconut oil in a skillet over medium-high heat, add onion and bell pepper and cook until they start to slightly brown on the edges.
Remove the meatballs from the oven and place in a 14 inch X 10 inch casserole dish; pour the cooked onion and pepper over the meatballs and set aside.
Whisk together the water and corn starch; stir in the remaining sauce ingredients and pour over the meatballs, onion and pepper.
Cover and cook in a 350 degree Fahrenheit oven for 45; remove cover and cook for another 15 minutes.

*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure.   2. These meatballs are delicious -- loved the sauce. I served them over rice, but I plan to make them as an appetizer for my next get-together. Nancy : )
