Sweet and Sour Pork Meatballs

These are great tasting meatballs I serve over cooked rice or Chinese noodles. They have been a favorite here for ages!



INGREDIENTS
1 onion diced small
1 bell pepper diced small
2 tablespoons coconut oil

MEATBALLS
2 1/2 pounds ground pork
1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon dried ground ginger
1 teaspoon salt
1/2 teaspoon fresh ground pepper
3 tablespoons water
1 tablespoon ground flax seeds
SAUCE
2 cups water
2 1/2 tablespoons corn starch
1/2 cup tomato ketchup
2 tablespoons orange marmalade
2 tablespoons rice vinegar
1 tablespoon mirin
1 tablespoon ginger paste
2 teaspoons GF Worcestershire sauce

DIRECTIONS
In a small bowl mix together the water and ground flax seeds; set aside and let sit for 15 minutes.
Mix together the ground pork, onion powder, garlic powder, ground ginger, salt, pepper and flax seed and water mixture.
Form into 1 inch meatballs and place on a rimmed baking sheet.
Place in a preheated 350 degree Fahrenheit oven and cook for 15 minutes.
In the meantime, melt the coconut oil in a skillet over medium-high heat, add onion and bell pepper and cook until they start to slightly brown on the edges.
Remove the meatballs from the oven and place in a 14 inch X 10 inch casserole dish; pour the cooked onion and pepper over the meatballs and set aside.
Whisk together the water and corn starch; stir in the remaining sauce ingredients and pour over the meatballs, onion and pepper.
Cover and cook in a 350 degree Fahrenheit oven for 45; remove cover and cook for another 15 minutes.

  2. These meatballs are delicious -- loved the sauce. I served them over rice, but I plan to make them as an appetizer for my next get-together. Nancy : )
