This is salad I make when I am serving a large crowd, it
feeds about 40 to 50 people depending how many other sides you are serving. For
my American neighbors the Best Food brand mayonnaise is the same as our
Canadian Hellman’s brand mayonnaise. Serve this salad cold and do not leave
this out at room temperature for any longer than 2 hours.
INGREDIENTS
10 pounds cooked, chopped potatoes
12 eggs (chopped)
2 carrots (shredded)
5 cups Hellman’s mayonnaise (more or less)
2 tablespoons dried dill weed
2 tablespoons old fashioned grainy mustard
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons sea salt
1 teaspoon freshly ground black pepper
1 small onion, finely chopped
DIRECTIONS
Mix together all the ingredients, using only 4 cups of
mayonnaise adding more of the mayonnaise as needed.
Refrigerate for a few hour before serving. I make this in
the morning to allow the flavours to meld together nicely.
*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure. If in doubt, call the toll free number on packaging to be safe and to make your cooking/eating experience is truly gluten free.
