Mushroom Pork Roast

This is a great way to enjoy a pork roast, it is so easy to put together and it is pure comfort food. I serve this up with mashed potatoes to drizzle the juices over. You can thicken up the juices into gravy by stirring in a mixture of 1 tablespoon corn starch and 1 tablespoon water just before serving if you like but this is not necessary.



INGREDIENTS
1 (2 to 3 pound) pork roast
2 cups GF vegetable broth
8 ounces sliced mushrooms
1 bay leaf
1 teaspoon Tabasco sauce
1/2 teaspoon garlic powder
Pepper, to taste


DIRECTIONS
Generously season the roast with ground pepper and place into the crock of a slow cooker.
Add the remaining ingredients, cover the slow cooker and cook over high heat for 4 hours or until pork is fall off the bone tender.
Enjoy!
