Bell Peppers and Beef Strips

This is an easy to put together meal we enjoy often during the winter months. It is perfect for a busy weekday dinner, put everything together the night before, toss it all in the crock and let it cook all day. You will come home to a lovely belly filling meal.



INGREDIENTS
1 1/2 pounds thinly sliced eye of round beef steak
6 cloves garlic, chopped
1 cup red wine
2 tablespoons olive oil
1 teaspoon ground mustard powder
1 teaspoon ground ginger
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon dried oregano
1/4 teaspoon hot pepper flakes
2 bell peppers, chopped
1 onion, chopped
1/2 cup good quality GF beef broth
1 tablespoon cornstarch

DIRECTIONS
Place the first 10 ingredients in a large re-sealable plastic bag and shake bag to mix.
Place in the refrigerator overnight.
Pour the contents of the bag in the crock of a slow cooker along with the chopped peppers and onion.
Mix together the beef broth and cornstarch and stir into the crock; cover and cook over low heat for 8 to 9 hours.
