Baked Beans in Coffee

Baked beans are one of my favourite pot-luck foods. I am often asked for this recipe but never took the time to write it down until now.

INGREDIENTS
2 cups dried navy beans
2 cups brewed coffee
1/2 cup brown sugar
1/4 cup pure maple syrup
1/4 cup white vinegar
1 (5.5 ounce) can GF tomato paste
2 tablespoon melted GF bacon drippings
2 tablespoons cocoa powder
2 tablespoons mustard
2 teaspoons prepared minced ginger
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 onion, chopped

DIRECTIONS
Place the beans in a large bowl, cover completely with water and let soak overnight.
Drain and rinse the beans and place in a crock-pot along with the onion.
Whisk together the remaining ingredients and pour over the beans.
Cover and cook on high for 7 to 8 hours, until all the liquid is absorbed and the beans are cooked through.
