Italian Pepper Skewers

These tasty skewers are easy to put together and quite savoury. They are a perfect side to any grilled meat!

2 bell peppers
1 large onion
2 cloves garlic, pressed
2 tablespoons vegetable oil
1/2 teaspoon dried oregano
1/4 teaspoon dries basil
1/4 teaspoon dried thyme
salt to taste
fresh ground pepper to taste

Slice the pepper in half, remove ribs and seed and chop into bite sized pieces.
Peel and chop the onion in to bite sized pieces.
Toss in a large bowl with the remaining ingredients and place in the refrigerator for a couple of hours to allow the flavours to meld.
Place on skewers and grill until at desired doneness.
