Pork Chops with Mushroom Rice

I tried this recipe from RecipeZazz by member Chef Shapeweaver. I did make a few changes to it to suit my dietary needs and really enjoyed this. Here is the recipe with the changes I have made.


INGREDIENTS
4 pork chops, center (cut 1/2 inch)
seasoned salt to taste
fresh ground black pepper to taste
2 tablespoons bacon fat
1/4 cup sweet onion (finely chopped)
9 to 10 ounces prepared GF cream of mushroom soup (I used 9 ounces of my Cream of Mushroom Soup Recipe but you can use your favourite)
1/2 cup dry long grain white rice

 DIRECTIONS
Season both sides of pork chops with your desired amount of seasoned salt and pepper.
Preheat oven to 350 degrees.
Melt the bacon drippings in a large oven proof skillet over medium heat.
Add seasoned chops and lightly brown both sides, remove from skillet; set aside.
In the same skillet you cooked the chops in add onion and cook until translucent, adding a bit of water if it starts to stuck.
Add soup and rice.
Place the chops over the rice and season with more pepper if desired.
Cover with lid and bake for 30 minutes or until rice is done.
