I came up with this recipe when craving buffalo chicken
wings. I was counting calories so I was on a mission to satisfy my craving without cheating and this definitely did. Serve
this with celery sticks and your favourite blue cheese dressing. I use the
Walden Farms calorie free blue cheese dressing to make this a full low-cal
experience. For those of you who don't have access to Frank's RedHot sauce, I do have a copycat recipe for it HERE
INGREDIENTS
1/2 pound ground chicken
1/4 cup rolled oats
3 tablespoons Frank’s RedHot sauce, plus more for serving
1 teaspoon dried parsley
1/4 teaspoon garlic powder
1/4 teaspoon salt
fresh ground pepper to taste
celery leaves, chopped
DIRECTIONS
Mix the first 7 ingredients together well and shape into 1
inch meatballs.
Generously coat a rimmed baking sheet with non-stick spray
and place the meatballs on the baking sheet.
Cook in a pre-heated 425 degree oven for 15 to 20 minutes,
depending on how big you have made the meatballs, turning every 5 minutes until
cooked through.
Place on a serving platter, drizzle with a bit of Frank’s
RedHot sauce and sprinkle with celery
leaves.
