Ginger-Garlic Potato Wedges

These are great as a side dish but I could eat a plateful of these to myself as a main.

INGREDIENTS
2 large baking potatoes
2 tablespoons olive oil
1 tablespoon GF soya sauce
2 tablespoons fresh ginger, grated, packed
2 clove garlic, minced

DIRECTIONS
Preheat oven to 450 degrees Fahrenheit.
Line a rimmed baking sheet with foil and coat with non-stick spray, set aside.
Clean potatoes well.                
Leaving skin on, quarter the potatoes and cut those wedges in half.
Rinse the potatoes and pat dry.
Toss all ingredients together in a large bowl making sure potatoes are well coated.
Pour mixture over baking sheet and place in oven.
Cook potatoes for 15 minutes per side then stand turn them on the skin side until cooked through, about 35 to 40 minutes altogether, depending on size of potatoes.
