Garlic-Thyme Potatoes

You can use a different type of potato for this recipe if you like. I have used fingerlings cut in half and mini roasting potatoes and those worked well also. If using the mini roasting potatoes, poke them with a fork a couple of time to allow for the flavours to penetrate. This is so easy and very tasty.

INGREDIENTS
2 garlic cloves, minced
1/4 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon savoury
2 tablespoon olive oil
Pepper, to taste
6 medium new potatoes, skin on

DIRECTIONS
Preheat oven to 450 degrees.
Mix garlic and salt together. Mash into a paste with back of spoon or with mortar and pestle.
Place in bowl with thyme, savoury and oil.
Clean potatoes, pat dry and cut each into 6 wedges.
Toss potatoes with garlic mixture.
Add pepper to taste.
Place on foil lined baking sheet, coated with non-stick spray, and bake until browned, about 20 to 25 minutes, turning halfway to ensure they are not sticking.
