Pineapple Vinegar

This is a recipe I make when the pineapples are inexpensive. I buy up a few of them and make a few batches of this. It is great drizzled over salads and used for vinaigrette recipes that call for plain vinegar.


Ingredients
1 pineapple, whole (peeled and cored)
5 cups vinegar, white
2 tablespoons sugar

Directions
Chop the peeled and cored pineapple and place in a large glass or plastic bowl.
Drizzle the sugar and vinegar over the pineapple and cover with plastic wrap.
Place in refrigerator for 7 days.
Strain through a sieve and discard the pineapple.
Store the vinegar in an airtight container in a cool dark place.
