2 tablespoons lime juice
1 tablespoons olive oil
1 teaspoon ground cumin
1 clove garlic, minced
1/2 teaspoon salt
Pepper, to taste
1 (19 ounce) cans mixed beans, drained and rinsed
1/4 cup fresh cilantro or flat-leaf parsley, chopped
1/4 cup frozen corn
red onion, diced or green onions, sliced (to taste)
In a large bowl, whisk together the lime juice, olive oil, cumin, garlic, salt and pepper.
Add remaining ingredients and toss gently.Refrigerate for at least 1 hour before serving.
