Mexican Roasted Chicken

 This moist and flavourful roasted chicken recipe is one I make often. It is so easy to put together and so tasty.

1 (3 to 4 pound) whole chicken
1 (35gram) envelope Old El Paso taco seasoning
1 cup water
1 tablespoon vegetable oil

Mix the taco seasoning, water and oil in a large re-sealable plastic bag.
Add the chicken and swish to coat the chicken, seal the bag and marinate in the refrigerator for 6 to 8 hours.
Remove the chicken from marinade and discard marinade.
Place the chicken in a baking pan fitted with a wire rack and cook at 350 degrees Fahrenheit for 2 1/2 hours or until cooked through and chicken has an internal temperature of 165 degrees.
