Smoked Rainbow Trout

My husband loves smoked fish and his easy recipe is one of our favourite. We make this using alder chips in our propane smoker. The cook time may vary from one smoker to another.

2 average size rainbow trout filets
1/2 cup brown sugar
2 tablespoons salt

Mix the sugar and salt together.
Lay the fillets skin side down on a the smoker rack.
Rub the sugar/salt mixture over top of the filets.
Place rack in the smoker.
Smoke in a 250 degree Fahrenheit smoker for 1 1/2 hours.
