Hot Italian Sausage and Tomato Casserole

A tasty casserole dish I enjoy on occasion. Do not sub any other rice for the brown rice or this will turn out mushy. Brown rice is a hard rice and it retains it firmness quite well. Cook the rice as per package directions making sure not to overcook it.

INGREDIENTS
1 pound GF hot Italian sausage
2 cups cooked brown rice
1 onion, chopped
1 bell pepper, chopped
1 (28 ounce) can diced tomatoes
1 cup pasta sauce
1 tablespoon olive oil
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes

DIRECTIONS
Drizzle the olive oil in a skillet and bring to medium-high heat.
Add the onions and peppers and cook until just starts to brown, about 7 minutes; remove from skillet and set aside.
Place the sausage in the skillet and cook until no longer pink and cooked through, about 15 minutes.
Mix all the ingredients together in a large casserole dish, cover and cook in a preheated 350 degree oven for 90 minutes, stirring half way through.
Remove from oven and serve.
