Green Olive Aioli

This is a lovely spread to serve with cured salmon or to mix with canned tuna or salmon for sandwiches.
I even use this on burgers at times, yummy……….

1/3 cup GF mayonnaise
1/3 cup pickled pimento-stuffed green olives, chopped fine
1 tablespoon juice from pickled olives
Salt, to taste
Pepper, to taste

Mix all ingredients together.
Refrigerate for at least 1 hour before using, to allow flavours to meld.
