This is a recipe I put together when I first went out on my
own. I was always looking for cheap meals that tasted good and this was one of
them. I still make this every so often and still enjoy it just as much as I did
back then. I used to make this with breadcrumbs but now use oat flour instead
due to the gluten allergy. If you do not have oat flour you can make it by
processing dried oatmeal in a spice grinder or use the same amount of GF breadcrumbs.
INGREDIENTS
1 can (5.5 ounce) GF chicken, turkey or ham, drained
1 cup cold mashed potatoes
1 egg
3 tablespoons oat flour
2 teaspoons mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt to taste
Fresh ground pepper to taste
Vegetable oil (enough to cover bottom of skillet)
DIRECTIONS
Break apart the meat and mix with the potatoes, egg, oat
flour, mustard, garlic powder and onion powder in a bowl; form into 4 patties.
Coat the bottom of a non-stick skillet with vegetable oil
and bring to medium high heat; cook the patties until browned on both sides,
about five minutes per side, being careful when flipping them over.
Season the cooked patties with salt and pepper to taste.
