I call these surprise brownie muffins because everyone is
usually surprised to find out that there are bananas in these. I sometimes add
chocolate frosting to these once cooled, but they are very tasty on their own.
INGREDIENTS
1 cup white rice flour
1/2 cup freshly ground flaxseed
1/2 cup tapioca starch
1/2 cup brown sugar
1 cup chopped walnuts
1/4 cup oat flour
1/4 cup cocoa
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Pinch salt
2 large eggs
1/4 cup maple syrup
1/2 cup melted butter
4 frozen bananas that have been thawed
DIRECTIONS
Peel the thawed bananas and mash; set aside.
Whisk the dry ingredients from the rice flour through to the
salt together in a large bowl.
In a smaller bowl, whisk together the eggs, maple syrup and
melted butter.
Pour into the dry mixture along with the mashed bananas and
mix well.
Coat 15 silicone muffin cups with non-stick spray and fill
2/3 of the way with the cupcake batter.
Place the filled silicone muffin cups on a rimmed baking
sheet and place in a preheated 350 degree Fahrenheit oven and bake for 35 to 40
minutes or until cooked through. (Insert toothpick in centre of cupcake and it
should come out clean.)
Remove from oven and place on a baking rack to cool.
