Onion Soup

This soup is so easy to put together and it tastes good enough to serve to any special guest. Eat it as is or turn it into a French onion soup by adding croutons and topping with a fresh slice of mozzarella and brown under the broiler.

INGREDIENTS
2 onions, thinly sliced
2 cloves garlic, minced
2 tablespoons bacon drippings
6 cups good quality GF beef broth
2 bay leaves
1 teaspoon old fashioned grainy mustard
Fresh ground pepper to taste

DIRECTIONS
Melt the bacon drippings in a large heavy bottomed pot and toss in the onions and garlic; cook until onions are softened and start to brown at the edges.
Add the remaining ingredients and bring to a boil; reduce heat, cover and simmer for one hour.
Remove bay leaves and ladle into bowls.
Enjoy!
