My husband’s hunting party butcher their own deer and
they used to thrown away the ribs. As you may have read in my other wild game
recipes, I do not like to waste any part of the animal that can be used. I came
up with this marinade to use on the ribs and they turned out so nice. The ribs
no longer end up in the trash when the deer is being butchered!!! This is enough for 4 racks of ribs.
INGREDIENTS
1 cup red wine
1 cup GF beef broth
1/2 cup coffee
2 tablespoons honey
1 teaspoon oregano
1 teaspoon chili peppers
1/2 tsp pepper
1 teaspoon GF Worcestershire
2 bay leaves
1 clove garlic, chopped
1 onion, chopped
1 1/2 cup GF BBQ sauce
DIRECTIONS
Place all ingredients except
BBQ sauce in plastic bag with ribs and let sit in refrigerator overnight.
Remove ribs, reserve 1 cup of the liquid and mix with the
BBQ sauce; set aside.
Place ribs on a baking sheet, bone side down and bake in a
375 degree Fahrenheit oven for 25 minutes.
Remove from oven and place ribs and sauce into crock-pot
and mix well.
Cook on low for 4 hours.
Enjoy!
