Pork Broth

This is a tasty broth I make with a mixture of pork bones, fat and meat. I usually make this when I take apart a raw roast to use the meat for other recipes. You can also do this with raw pork hocks.


INGREDIENTS
8 cups water
1 1/2 pounds pork bones, meat and fat.
1 carrot
1 onion
1 stalk celery
2 cloves garlic, crushed
12 peppercorns
1/2 teaspoon salt or more to taste
1 bay leaf
few drops liquid smoke

DIRECTIONS
Place all the ingredients in a large pot and bring to a boil.
Cover, reduce heat and simmer for 4 to 6 hours.
Taste and add salt if needed.
Strain and cool the mixture completely in the refrigerator (I leave it in there overnight).
Scrape and discard the fat from the top and place in the freezer in 2 cup portions for future use. ie: for gravy or soups.
