Low-Fat Egg Salad

This is a tasty egg salad recipe I make quite often. I sometimes use fresh garlic in this. 

6 hard boiled eggs, chopped
1/2 cup yogurt cheese
1/4 cup finely diced bell pepper
2 tablespoons finely chopped green onion
2 teaspoons Dijon mustard
garlic powder, to taste (optional)
sea salt, to taste
pepper, to taste

Mix all ingredients together in a glass or plastic bowl and refrigerate for about half an hour to allow the flavours to meld.
Serve with your favourite GF crackers or over GF bread.
