4 ripe bananas, mashed
1cup white rice flour
1 cup brown rice flour
1/2 cup coconut milk (can use any liquid)
1/3 cup sugar
1/4 cup vegetable oil
4 teaspoons baking powder
Preheat oven to 425 degrees Fahrenheit.
Lightly grease 12 holes of a muffin tin. (Do not use muffin liners, the muffins will stick to them.)
Mix all the ingredients together well.
Divide evenly among 12 greased muffin cups.
Bake for about 20 minutes, until toothpick comes out completely clean. (Will vary from one oven to another)Allow to cool for 5 minutes before removing from muffin tin.
